Delicious in Dungeon #61: Local Cuisine From Someone's Hometown

Who's home cuisine is this? Is there any point in keeping it a secret? I... don't know. I don't think its really a spoiler, but maybe it seems like one? So I thought id be nice.

buongiorno we are making some authentic italian food according to 1 dwarf who lives in a dungeon


OK first of all the key ingredient, roasted pork. Research seems to suggest they make "chashu" style pork, which is pork belly slow roasted in a sort of bbq style marinade.


First I have to remove the rind i guess. Its got this kind of hard skin layer on one side. I just kind of had to saw it sideways for what seemed like an eternity.


Next, im rubbing on some chilli flakes, powdered ginger, brown sugar, soy sauce and cooking sake. You could marinate this for a while but im not a restaurant i dont care


I couldn't find any cooking twine at the shops (does nobody practice food bondage no more?) so ive tried to roll it up and wrap it really tight with foil and stick it in a loaf tin. I think you are also supposed to sear the pork for proper chashu, but knowing my oven pork tends to get burnt pretty quickly on the outside and i dont like a light touch on the inside so im just gonna roast it straight up. 


Alright the roasts been roasting in the oven for some time, nows a good time to start on the rest of the dish. The... the "pasta". The spaghet. This is why I don't call spaghetti "noodles". We've got traditional italian ingredients like ramen noodles, bean sprouts, cabbage, spring onion, egg and garlic.


First ill get the soft boiled egg out the way. I remember being told you shouldnt boil an egg in a soup, something about eggshell contaminants or something? Dunno if true but here we are. 7 mins and then it can cool off while we do the other stuff.


For the broth i've got this fancy chicken stock I oughtta finish up, as well as some miso paste.


Adding a big fistful of these hotpot/ramen noodles and hot water. These noodles take ages but they are designed for a nice slow cooked broth.


While thats all going on, I rinse the beansprouts and fry them up.


When they've shrank a bit I can chop the pak choi (leafy cabbage) and fry that a bit too. Hmm... am I forgetting something...? 


?!!?!?! I ALMOST FORGOT THE ROAST!!! Its looking ok though. Will it stay together when I slice it? Well we will find out soon.


Since its very juicy im going to add some of the pork fat juice into the broth as well.


Once the noodles are done we can start assembling everything and emptying the pan so we cna cook up the final touches - some of those chopped spring onions and a couple cloves of crushed garlic!

Well it looks pretty cool. But... its criminally underseasoned. Despite all that garlic, which is kinda nice, it kind of has that sickly taste of pork fat a bit too strongly. Maybe I really should have seared it or cooked it uncovered for longer. I also should have used even more seasoning in the first place, I was a bit light on it because it was a faff trying to roll the meat up. I guess the vegetables also dont really add much of a pop of sweet or sour either. Maybe im just spoiled on restaurant quality noodles because I thought this would be an easy winner. I feel very full now.

Splatoon 3: Crab-N-Go #1: Crab Trap Sandwich

Alright its time to get our crab on and make the CRAB TRAP SANDWICH!!

Because the pairs of meals are extremely similar to eachother, I want to scope the initial one down a bit to add more ingredients in the second version... so if something seems missing... too bad.


We've got some flat bread, more ready to heat tempura prawns, a breaded "crab claw", a lemon, an egg, and some instant yakisoba. This is gonna be one crispy sandwich!


Going to cook this in a flatter pan than usual in a hope to fry off as much of the water as possible and maybe even crisp it up a bit.


Yeah we've got a lot going on here (the stuff in the oven pan is cooling)


I was all up in the air about what to use for the bread on this one. Arepas? Potato scones? Pitta bread? I opted for pitta bread in the end because those other ones are unreasonably hard to acquire. But turns out even the pitta bread was hard to find! They were FRESH OUT except for this one lonely pack of multiseed pitta. It's a decent shape and sturdiness so it should be fine.


It's gonna have to be fine because theres so much to stuff in here! Hmmm is it me or does it look a little dry...? Do you think we could put a cheeky bit of sauce in there?


Better! Squeezed the lemon, and added a bit of kewpie mayo and hot&sweet sauce. Now to add the egg and finish assembling.

I've underestimated you, Marigold... if you can get past the sheer unwieldiness of this "sandwich" its crispy junk food heaven! I made a good call on the sauce as that added just the perfect amount of extra punch. The fresh lemon and prawns and yakisoba and egg and everything just go together sooo well.

Super Paper Mario: Saffron & Dyllis Super Show #90: Dyllis Dynamite

 Dyllis Dynamite is made from EGG BOMB and DYLLIS BREAKFAST

OK so we need to break this down a bit. We still have some EGG BOMB but I don't have any dyllis breakfast left, which was made from leftover SPICY SOUP and SHROOM SHAKE. Complicated. But here's what we're gonna do: Make a fresh spicy ramen soup with mushrooms and the leftover devilled eggs.


Making a soup base with seaweed, veg stock, grated ginger, miso paste, and some szechuan spicy hotpot paste. What, you think im just trying to use up a bunch of leftover ingredients in my cupboards? Well... :)


Then we add in the sliced mushrooms, a squeeze of lemon and some soy sauce. And then we just let it cook for a while.

No I didn't eat the whole fresh chillis, that szechuan pepper paste is already no joke. Nice flavours, definitely lived up to being called dynamite. Conventional ramen toppings probably would have been even better though, like some barbecue pork, surimi, bamboo shoots, spring onions etc.

Super Paper Mario: Saffron & Dyllis Super Show #68: Love Noodle Dish

 Love Noodle Dish is made from LOVELY CHOCOLATE and FRESH PASTA BUNCH


I think we have already done enough chocolate with pasta, so instead i'm going to focus on the gimmick of having a heart shaped bowl I nicked from my mum, and since it says "noodles" in the title use it as an excuse to do some cheeky instant noodles instead. I'm going to lean in to this pad thai flavoured one and add some spring onion, red chilli and a sprinkle of crushed up roasted peanuts at the end. And maybe a LOVELY CHOCOLATE on the side.

Now this is how you make a romantic lunch! I'm pleased with my own presentation as well as the flavour of the noodles. And the chocolates a lovely treat at the end! Thanks mum for letting me borrow your heart dish <3

Cooking Mama's Cooking Challenge #46: Udon

 Another pretty simple one, udon wanna mess it up ;-|

Make stock!

We've got dried konbu kelp and water!

Separate the stock!

I mean i can literally just... pick these out... Also seems cooked konbu is edible but its very high in iodine so you shouldn't eat a lot at once. This recipe throws the used seaweed out but im adding back a few pieces chopped up smaller and im going to chop the rest up and save it to make a seaweed salad.

Stew!

So we cook some udon in the konbu broth and add soy sauce and salt. Soy sauce is already salty enough for me so i don't add much salt.

This flavours simple and subtle but really well balanced! it feels like a proper recipe with just those few simple ingredients. The umami flavour from the konbu broth is really effective.

Cooking Mama's Cooking Challenge #39: Soba

The hell am i buying buckwheat when i already have packs of soba in my cupboard 

Add the ingredients!

ok we are actually cooking now

Remove the soba!

wow mama ur so skilled tipping out the water but not the noodles but im from the future and i have a collander!! it also means i can rinse it with lots of cold water until it becomes cold soba for the recipe

Finish!

Made some soba sauce to go with! a bit of dashi stock, soy sauce, mirin and seaweed sprinkles. The soba sauce was really nice, you just end up sorta dropping them in the bowl of sauce and eating them out of there since they are hard to 'dip'. Not sure why i wouldn't just want to make hot soba noodles in a bowl with the sauce tbh.
